Onion Pakoda

Ingredients:
6 Onions 
1 tsp Chilli powder
 
2 Cups besan
 
¼ tsp Turemeric powder
½ tsp carom/ajwain seeds 
A pinch baking soda
 
Salt to taste
 
Oil for frying
Method:
Thinly slice the onions.
Add the chilli powder, besan, carom seeds, baking soda, turmeric powder, baking soda and salt to taste.
Mix well to make batter adding very little water. (Avoid using excess water. First it is recommended to squeeze the onions in the flour so that its own water is used for making the batter and then add water if needed)
Heat oil in a wok.
Take a small portion of the mix at a time and drop it in hot oil.
Fry till golden brown.
Serve hot with chutney or ketchup or as it is.

Garlic Fried Rice

Ingredients:
Green Chillies : 4 slit lengthwise
G
arlic : 10 pods crushed roughly
Curry leaves : 2 springs
Cumin seeds : 1 tsp
Rice : 1 cup
Ground pepper powder : ¼ tsp Salt : as per your taste
Ghee : 1 tbsp
Oil : 1 tbsp
Method: Cook rice and separate the grains and keep aside.
Heat one tablespoon of oil
 & ghee in a skillet and add the cumin seeds, green chillies, crushed garlic and curry leaves one by one and fry till garlic turns golden brown.
Now add the
cooked rice, salt and pepper to taste, mix it well, fry for about 2 to 3 min. and turn off the heat. Serve hot as it is or with any gravy of your choice.
